The owners have dedicated great attention to the well-being of guests in the architectural choices and furnishings of the rooms. Thanks to a careful renovation, the farmhouse has been transformed into an innovative agritourism, following the criteria of bio-architecture, with a careful use of materials and energy, and offers bio-compatible equipment and services, while respecting the nature of the place. The chromatic choice of the rooms follows the principles of feng-shui and the furnishings of the rooms have been built using woods, glues and paints of natural and completely organic origin. You can enjoy various facilities: outdoor swimming pool, spa, tennis court, relaxation areas, hammock grove, panoramic terrace. Everything is thought to guarantee you the maximum comfort.

At Podere Castellare you will be able to experience the unique gastronomic heritage of the region in a relaxed and familiar environment. The restaurant offers local specialties prepared with finely selected products and seasonal organic vegetables grown on site, accompanied by farm oil and local wines. It also houses the first London Dry Gin micro distillery in Italy to produce Tuscan gin with local botanicals, using liquid infusion and steam distillation methods. It is from this area that the best juniper in the world and the root of the iris used to bind the water to the various aromas originate. The tradition can be traced back to the monks of the nearby Abbazia di Vallombrosa, where the same recipes are still used today and the process of maceration with the juniper berries in infusion. You can visit the distillery, follow a session dedicated to distillation, go to the fields to discover the properties of the plants or book a lunch or dinner where you will be offered dishes flavoured with local botany accompanied by gin. All this in an accommodation facility that combines tradition, design elements and Tuscan flavours.
