Il vitello Tonnato o \u201cVitel Ton\u00e8\u201d viene servito soprattutto come antipasto e prevede diverse varianti. La preparazione tradizionale richiede carne di vitello, uova, capperi, tonno, vino bianco e aromi. La carne fatta macerare nel vino bianco si lascia bollire con gli aromi, fino a formare un brodo profumato. Il brodo quindi viene frullato con tutti gli altri ingredienti per creare una salsa da versare sulla carne.\u00a0Nelle versioni pi\u00f9 recenti al posto delle uova si pu\u00f2 utilizzare la maionese\u00a0 che rende il piatto ancora pi\u00f9 saporito e goloso!<\/p>\n<h3><strong>Acciughe al verde<\/strong><\/h3>\n<p>Le <strong>acciughe al verde<\/strong> sono un antipasto tipico della cucina piemontese. Storicamente le acciughe sotto sale arrivavano in Piemonte dalla Francia insieme ai carichi di contrabbando del sale. Per preparare questo gustoso piatto le acciughe sotto sale vengono lavate e pulite. Il segreto della ricetta \u00e8 il \u201cbagnet\u201d, una salsa verde che si prepara con prezzemolo, aglio, olio d&#8217;oliva, mollica di pane e il\u00a0 peperoncino. La salsa verde deve ricoprire completamente le acciughe, e il piatto deve riposare per un giorno intero prima di essere servito. Il baccal\u00e0 come di consueto va messo a bagno molte ore prima. Le\u00a0 vitelotte sono un tipo di patata molto antica che proviene dalla Francia e ha una caratteristica polpa viola, anche il profumo e il sapore sono particolari rispetto alle patate comuni. Un&#8217;altra ricetta del Baccal\u00e0 alla piemontese prevede la frittura del baccal\u00e0, delle patate, dei peperoni, e della cipolla, il tutto viene passato in tegame con il vino bianco e cotto a fuoco lento.
